1 | onion, chopped | ||

1 1/4 | cups | dry cider | |

1/2 | teaspoon | fresh mint, chopped | |

2 | pounds | (6 to 8 fillets) cod | |
|
|||
2 | apples, peeled and diced | ||

3/4 | cup | heavy whipping cream | |
|
Heat butter in frying pan. Add onions and saute for 5 minutes. Add cider, mint, salt and pepper. Bring to a boil and let boil for 5 minutes, then turn heat to low.
Add cod fillets and poach for 10 to 15 minutes (take care to poach the fish, do not boil). Remove fish and keep warm.
Over low heat, reduce the sauce and add diced apple. Slowly add cream while stirring to thicken the sauce. Sauce is ready to serve when apples are tender and sauce has thickened.
Serve fish with sauce poured over each fillet.
